From looking at my skillet, you wouldn’t know it was winter, and that is the point. Because in reality we are stuck in winter that will not stop. So, for dinner this week, something nice & summery.
My grandmother makes this amazing squash casserole that I adore but, particularly when cooking fast, I don’t really have the patience to wait on a casserole to finish. So instead I cook it on the stovetop, but it still tastes like summer and amazing.
1 red onion
2 tbls butter
6 smallish zucchini or yellow squash
1 can stewed tomatoes, half the liquid drained
whatever leftover scraps of meat you have (the last of a rotisserie chicken works perfectly)
1 cup sharp cheddar
salt & pepper
Cut onion, clarify in butter. While onion is cooking chop zucchini. Add zucchini to pan. Salt & pepper. When the squash is about 70% cooked, add tomatoes and more pepper. Tear/cut chicken in bites, add to pan. Once the zucchini is tender, add shredded cheese and remove from heat. Let cheese melt. Eat, enjoy, THINK WARM THOUGHTS.
