Last week my mom pointed out that I’ve been lazy about posting recipes on Sundays lately. Largely I’ve been eating items from the garden (eggplant, peppers, tomatoes, etc) in as many ways as possible and none of them overwhelmingly exciting – except that eggplant gratin which I’ve cooked 3 more times since I posted it. But this week, something special & amazing.
Eggplant, Okra, Chorizo & Peppers
3 long skinny eggplant, chopped
2 large handfuls of okra, chopped
3 green bell peppers, chopped
2 jalapenos, diced fine
1 onion, chopped
1 lb chorizo (fresh from the farmer and really tasty)
1/4 cup raw milk yogurt cheese
Heat olive oil to coat pan, add eggplant & salt, after a minute or so add okra. When both the eggplant & okra are mostly fried, add onion, bell pepper, jalapenos, and chorizo. Add 5 spice, cinnamon & pepper to taste. When chorizo is completely cooked and onions are clarified add yogurt cheese for just a little tangy flavor. Serve over rice.
